Watermelon & Smoked Salmon Salad


Cook couscous for 10 minutes in boiling hot water. Drain and rinse, and leave to cool.

Arrange the salad leaves with the couscous, salmon and capers, then arrange watermelon chunks on top. Garnish with plenty of fresh herbs.

To make the dressing, in a small jar, shake the olive oil, lemon juice, mustard, capers anchovy and garlic until blended (or whisk together in a small bowl). Season to taste with freshly ground black pepper. Drizzle lemon and caper dressing over salad to serve.
