Spinach and Pea Risotto


Heat oil in a saucepan over medium heat and cook onion and garlic for 2 minutes without browning. Add rice and cook for 2 minutes, stirring continuously. 

Add 1 cup of stock at a time stirring until absorbed before adding more until rice is just tender. Add cream.

Stir in peas, spinach, butter, salt and pepper. Continue to cook over low heat, covered, for 2 minutes or until spinach is wilted and all liquid has been absorbed.

Season with salt and pepper if required, and top with parmesan cheese before serving.
