Spicy Prawn and Mint Slaw


Serves 4

Put prawns in a bowl, add lemon juice, salt, chilli flakes and chilli sauce, mix and set aside to marinate for 10-15 minutes. 

Heat olive oil in a non-stick pan, add garlic and sauté until golden. Add marinated prawns and stir. Cook until prawns are just cooked, approx 5 mins. Remove from heat.

Combine the dressing ingredients together.

Assemble your salad by layering the Coleslaw, peas, cherry tomatoes, bean sprouts, spicy prawns, mint, chilli, and drizzle over the dressing. Serve with lemon wedges on the side.
