Marinated Tofu Kebabs with Spicy Spinach Green Salsa Verde


Combine the marinade ingredients together in a bowl. Add tofu and marinate for 30 minutes.

Heat barbecue or grill. Thread tofu, broccoli, sweetcorn pieces and beetroot onto skewers. Barbecue or grill the skewers for 4-5 mins on each side or until cooked through and golden.

You can make the Spicy Spinach Green Salsa Verde ahead of time and refrigerate for up to 3 days: Place the spinach, parsley, basil, chillies, garlic and capers in a food processor. Process until finely chopped. With the motor running, slowly add oil and lemon juice to parsley mixture. Process until well combined. Season with salt and pepper.

Serve marinated tofu kebabs with the salsa on the side or drizzled on top and enjoy.
