Lamb & Mozzarella Ranchslaw Salad


Heat a fry pan on high. Rub lamb with oil and season. Cook 2-3 minutes each side, until cooked to taste. Loosely cover with foil and rest for 5 minutes, then slice.

To make the dressing, combine ingredients in a jar and shake until combined.

Arrange the salad ingredients on a large platter starting with the Ranchslaw. Use the Ranchslaw dressing to drizzle over the slaw then layer with spinach. Arrange the sliced lamb medallions, mozzarella slices, and tomato slices in one outer and one inner overlapping circles. 

Top with basil leaves and chilli. Season with salt and pepper. Serve drizzled with dressing.
