Crisp ’n Zesty with Lamb Cutlets


Coat lamb rack with herbs and spices, lemon and oil. Marinate in a covered bowl for 1 hour at room temperature.

Pre-heat the oven to 200°C. Heat a tablespoon of oil in an oven proof pan over a very high heat. Sear the lamb racks for a couple of minutes until browned on each side

Place the lamb rack in the oven for 10-20 minutes (depending on the size of the lamb rack and how rare or well done you want your lamb). Remove from oven, cover with foil and let rest for 15 minutes.

Prepare the Crisp ’n Zesty salad by combing the salad, walnuts, croutons and crumbled feta together. Divide between plates and drizzle over the Citrus and Apple Cider Dressing.

Cut lamb chops away from the rack by slicing between the bones. Serve 2-3 chops per person with the salad and enjoy.
