Broccoslaw Jacket Potatoes


Preheat oven to 180ºC.

Prick the potatoes with a fork and place in a baking dish. Coat with the oil and put in the oven for 45-60 minutes or soft through. Allow to cool. 

Once cool enough to handle, cut the tops off the potatoes. Scoop out the insides, being careful not to break the skin, and put in a bowl. Mash the potato inside with one cup of the cheese and milk and season. 

Place mashed potatoes back in the skins, top with remaining cheese and put back in the oven for 20 minutes. Remove from the oven and top with Broccoslaw and red onion. Drizzle the enclosed dressing from the Broccoslaw over the potatoes and serve.
