Broccoslaw Cake with Lemon Cream Cheese Icing


Preheat oven to 180°C. Get your cake tin ready by spraying with oil spray and lining with baking paper.

Combine self-raising flour, baking powder, sugar and spices in a bowl. Then add Broccoslaw, walnuts, and apricots and combine.

In a separate bowl, whisk together the eggs, golden syrup, oil, milk and vanilla extract. Pour into the dry ingredients and mix to combine, be careful not to over mix.

Pour the mixture into the pre-prepared cake tin and bake for 50 minutes or until a skewer comes out clean.

Once out of the oven, allow the cake to completely cool. Then remove the cake from the tin and baking paper. 

To make the icing, combine ingredients in a bowl until a creamy and even consistency. Use a knife to spread over the cooled cake.
