Directions
Pre-heat oven to 160°C. Dice the onion and capsicum. Crush the garlic. Using a sharp knife remove the corn kernels from the cob. Add a dash of oil to a frying pan. Cook the corn kernels for 2-3 minutes till slightly charred.
Remove the corn from the pan and set aside. In the same pan add the capsicum and onion, cook for 3 minutes.
Remove from the heat and set aside.
In a large bowl add the cream cheese, sour cream, cheddar cheese, Jalapeno, paprika and crushed garlic. Mix well to combine. Add in the capsicum, charred corn, onions, jalapenos. Taste for seasoning add salt and pepper as required.
Transfer the mixture to an oven proof dish.
Bake in the oven at 160°C for 30 minutes.
Remove from the oven garnish with coriander. Best served immediately with corn chips for dipping.
