Creamy Kabocha Soup

'Kabocha' is the Japanese name for Buttercup Squash


1. Sauté onion slices with butter in a saucepan until soft.
2. Add Kabocha slices and sauté together.
3. Add chicken stock and water and simmer until kabocha softens.
4. Allow to cool and then process in a blender until smooth.
5. Return to the saucepan and add milk. Heat over low heat and season with salt and pepper.

Try a garnish of toasted seeds, chopped corriander or sour cream to serve.
