Roast Veggies with Maple Miso Dressing

Directions

Preheat oven to 170°C. Spray a large oven dish to grease. Drain the beetroot juice from the pack. Place veggies in dish and spray again. Give the dish a shake to ensure all veggies are coated. Season with salt and pepper. Cook for 40-45 minutes or until veggies are browning and soft through.

To make the Maple Miso Dressing, place all the ingredients in a jar or glass and shake or whisk until combined. Drizzle some of the dressing over the veggies before serving and serve the rest of the dressing in a jug alongside the vegetables.
