Watermelon & Smoked Chicken Noodle Salad

Directions

Cut watermelon into chunks and remove any seeds. Slice smoked chicken into pieces.

Soak the vermicelli noodles in cold water for 10 minutes. Stir with a fork, drain.

Mix all the dressing ingredients in a jar with a lid or small glass jug.

Arrange salad leaves on a serving platter, top with nests of noodles, slices of smoked chicken, radishes, and the watermelon. Drizzle with dressing and toss gently to combine. Garnish with pumpkin seeds and snowpea sprouts. Serve immediately.
