Warm Chicken Noodle Salad


Begin by frying the chicken in the oil over a high heat in a frypan for 5 mins or until cooked through (will depend on the size of your chicken chunks - check the largest piece to make sure it is cooked). Remove the chicken. In the same pan, add the soy and chilli sauce and Broccoslaw and stir together to combine. Don’t overcook the Broccoslaw - it should still have a crunch. Return the chicken to the pan and combine. Keep warm.

Meanwhile cook the noodles as per package instructions and drain.

Mix together the dressing ingredients and assemble the salad in a large bowl by tossing the chicken mix, noodles and dressing together. Divide amongst bowls and top with peanuts and coriander.
