Vietnamese Beef and Crispy Salad

Serves 4


Whisk the marinade ingredients together in a bowl to dissolve the sugar. Place the beef strips in a resealable bag or container and pour over the marinade to coat the strips. Seal the bag and marinate for an hour or overnight in the fridge. 

Heat a little oil in a frying pan over a high heat. Cook the beef strips for 3-4 minutes until browned.

Combine the beef, crispy salad, cherry tomatoes and cucumber with the remaining dressing, season with salt and pepper and arrange in bowls. Garnish with peanuts, sesame seeds, fresh herbs and chopped red chilli.
