Veggie Fried ‘Rice’ with Ranchslaw

Directions

Blitz the broccoli heads in a food processor until they resemble rice.

Add a couple of drops of soy sauce to the beaten eggs and mix. Cook the egg in oil in a frying pan by spreading over the pan like a pancake. When cooked through remove from the head, roll up and cut into strips and set aside.

Add oil and onion to the frying pan and cook until soft. Add ginger and garlic and cook for a further minute while stirring. Add riced broccoli and cook until softened. Lastly stir in Ranchslaw, soy sauce and oyster sauce until combined but not overcooked, approximately 1-2 minutes.

Garnish with cashews, egg strips and spring onion to serve.
