Directions

Preheat oven to 200°C. Toss pumpkin and sliced portobello mushrooms with a little oil and roast for 15 minutes or until cooked through. Cook corn on the grill or BBQ until cooked through and charred, then slice kernels from the cob. Assemble salad by layering spinach, corn kernels, cherry tomatoes, avocado, beetroot, roast pumpkin and mushroom and top with sesame seeds and paprika or chilli powder.
