Spinach and Feta Pinwheels


Pre-heat oven to 180°C. Combine spinach, cheese, spring onion, feta, nutmeg and salt and pepper together in a bowl. 

Whisk egg in a separate bowl and apply to one edge of each sheet of puff pastry. Spread out the filling evenly on both sheets, stopping just before the egg-washed edge. Roll pastry towards the egg-washed edge, keeping the pastry tight as you roll it. Seal the roll by pressing it together. Cut into slices and place on an oven tray lined with baking paper.

Bake in the oven for 15 minutes, or until golden brown.
