Tomato Soup

Rustic Italian Tomato Soup


Place a large pot on a stovetop on medium heat. Add oil and onions, frying until the onions have browned. Add beef stock, tinned tomatoes, garlic and spinach, mixing and then cook until thoroughly heated and spinach has wilted. Remove from heat. Use a hand mixer and pulse soup until all it reaches desired consistency.

Return soup to the stovetop. Add salt, oregano and basil leaves and heat. Serve soup with extra spinach leaves and croutons. Enjoy!
