Ranchslaw Satay Fried Rice

Directions

In a food processor, blitz the Ranchslaw until it becomes rice-sized chunks. In a frypan over med-high heat, fry the tofu in 1 Tbsp of the oil until browned on all sides. Remove and set aside. Add the remaining oil and cook the ginger and garlic until fragrant. Add the ranchslaw rice and stir until just soft. Add the soy and oyster sauces and combine. Remove from heat. Meanwhile defrost the edamame beans and steam the broccoli florets either in the microwave or on the stovetop until thawed, heated through and cooked to your liking. Stir the satay sauce over a medium heat on the stove top until hot. Divide the Ranchslaw rice between dinner plates, top with veggies, then the tofu, and then the satay sauce. Serve with sesame seeds and coriander if desired.
