Ranchslaw Ramen Comfort Bowl with Tofu

Directions

Heat a large pot over medium-high heat. Once hot, add oil, tofu cubes, garlic, ginger, and onion. Sauté, stirring occasionally for 5-8 minutes or until the onion is cooked to your liking and the tofu is golden. Meanwhile cook noodles per packet instructions.

Add the vegetable stock, soy sauce, Mirin, miso paste and cooked, drained noodles to your onions and tofu until heated through. Add chilli (if desired). Add Ranchslaw and remove from heat. Serve with sesame seeds and spring onions to garnish.
