Rainbow Savoury Muffins


Preheat oven to 160°C fan-forced or 180°C conventional oven. Line a large muffin tin with baking paper.

Mix all ingredients in a large bowl until just combined. Add the juice from the beetroot packet. Fill the muffin tin evenly with mixture. Top each muffin with a few extra spinach leaves and pieces of pancetta. Spray the top of the muffins with oil spray to prevent burning or drying out. Bake for approximately 25 minutes or until a skewer comes out clean.

Enjoy hot or cold with butter and relish if desired.
