Mesclun, Egg and Kumara Mash Comfort Bowl


Cook rice per packet instructions. Boil kumara until soft. Drain and mash with butter until smooth and then season to taste. Fry egg in a pan in the olive oil until the white is cooked, the bottom is crunchy but the yolk is still runny. Assemble the bowl by first adding the Mesclun salad with dressing, the rice, the mashed kumara and the egg on top. Sprinkle with pumpkin seeds if desired and season with salt and pepper. Enjoy!
