Kale Chips with Nori

Directions

Preheat oven to 150ºC. Remove stems from curly kale and tear into large pieces. Spray thoroughly with olive oil and massage the oil into the leaves being sure to get into the folds of the leaves. Spread the kale over a lined baking tray, season with salt and put in the oven for 20 minutes or until browning at the edges but not burning. Remove from the oven and allow to rest on the baking tray for a few minutes to keep crisping.

Lay the baby kale and nori sheets on 2 lined baking trays, spray with oil and season with salt. These will only need 3-5 minutes in the oven. Once slightly brown around the edges, remove and allow to cool. In a large bowl combine the kale and break up the nori into large pieces over the top.
