Directions

Bring a saucepan of salted water to the boil and add the baby potatoes. Cook until the potatoes can easily be pierced with a skewer. Drain and set aside. Fry the bacon over medium-high heat until crispy. Remove bacon (leaving fat in the pan) and add the drained potatoes to the pan. Crush slightly with the back of a fork and cook in the bacon fat until golden and crispy. Remove from heat and sprinkle with salt.

Prep your potatoes by washing and drying. Using a cheese grater, shred the potatoes. Make your breakfast bowl with a layer of spinach, topped with the potatoes, ripped up bacon, cherry tomatoes, coconut and pesto. You can find the Spinach Pesto recipe on our website. Season and enjoy!
