Filled Spinach Wraps


Pour the boiling water over the spinach and cover until wilted, then drain. Add wilted spinach to a blender and pulse until puréed.

In a bowl, mix the dry ingredients together with the oil. Once the mixture has come together, add in spinach. Mix and then knead into a dough. Add water if needed. If the dough is too sticky add a little more oil. Form into a ball and rest for 20 minutes un-covered. 

Once rested, divide the dough into 6 and roll out into a wrap shape. If the dough is sticking to your surface, add a little more oil. Heat a pan to medium heat and cook the wraps for 2 minutes on each side. Brush the cooked wrap with a little oil to avoid cracking. Once all 6 are cooked and oiled they are ready for filling.

Filling options:

Slaw and ham: Add two handfuls of Ranchslaw, 3 slices of beetroot, 3 slices of ham and a handful of grated cheese to each spinach wrap. Top with Homestyle Dressing from the Ranchslaw pack and secure with a toothpick.

BLT: Add a handful of shredded lettuce, 3 slices of tomato and 2 slices of bacon to each spinach wrap. Add a dollop of aioli and secure with a toothpick.
