Creamy Chicken, Broccoslaw and Mushroom Casserole


Heat the oil in a heavy-based pan over a medium to high heat and fry the onions and chicken, skin side down, until it becomes crispy. It will take about 5 minutes.

Add the garlic and mushrooms and stir until the garlic is fragrant but not burnt. Pour over the stock and wine, add the herbs and cover with a lid.

Leave to simmer very gently for about 10-15 minutes until the chicken is cooked through. Stir through the cream and Broccoslaw and season to taste. Remove from the heat when the Broccoslaw is just wilted and serve with fresh herbs to garnish.
