Coconut Vegetable Curry


Put your favourite rice on to cook as per packet instructions. While the rice is cooking, heat a large saucepan or pot to medium heat and add coconut oil. Add the red onion and fry until softened. Add the garlic, ginger and curry powder and cook for a minute or so, stirring until fragrant but being careful not to burn, then add the chopped carrot and kumara. Stir until they are coated in the oil and spice. Add the stock and cook for approx 10 minutes until the carrot and kumara are softening, stirring frequently. Add the broccoli and cauliflower florets and cook for a further 5 minutes. Stir in the coconut cream and simmer until the vegetables are tender. Season to taste. Before serving stir through the Baby Spinach. Serve on rice with your choice of coriander, chilli slices and lemon wedges.
