Beetroot and Spinach Parcels


Pre-heat oven to 180 degrees. 

Mix together the grated beetroot, walnuts, feta, cumin and salt and pepper. Add spinach and mix well to combine.

Grease a muffin tin. Cut flaky puff pastry into four even squares and press the pastry squares into the muffin tin with four corners of each sticking up evenly over the tin. Add 1.5 tablespoons of spinach and beetroot mixture per square and holding all four corners together in one hand, with the other press together the creases to seal each side. 

Once all your parcels have been filled, place in oven for 20 minutes, or until mixture is cooked and tops are golden brown.
