Fresh Corn Cobb Loaf

Perfect for parties and entertaining - a loaf filled with cheesy and hot, roasted corn dip. Serves 8-10.


Remove husks and silk from the corn cobs. Bring a large pot of water to the boil. Cook the sweetcorn cobs for 10-15 minutes until tender. Remove the corn kernels, using a sharp knife to scrape down the sides of each cob.

Heat the oil in a frying pan over a medium heat. Fry the onions and bacon for 5 minutes. Add the spinach leaves to the onions and bacon and stir through until just wilted. Remove from heat.

In a large bowl, mix together the sour cream, cream cheese, mayonnaise, curry powder, grated cheese, and the onion, bacon and spinach mix. Stir in the corn kernels and parsley.

Preheat the oven to 180°C fan bake. Cut the top off the round cobb loaf, set aside. Pull most of the bread out from the inside of the loaf. Place the loaf on a baking tray and toast in the oven for 10 minutes. Spoon the corn mixture into the bread bowl, cover with the top of the bread. Cover with a sheet of aluminum foil and return to the oven. Cook for 1 ¼ hours until the mixture is bubbling and melted.

Serve hot accompanied with raw vege slices (crudites), corn chips and bread slices.
