Winter Spinach and Broccoli Gratin

Serves 4

Heat oven to 200°C. In a medium saucepan, bring the cream and garlic to a boil over a medium-high heat, being careful that it doesn’t boil over. Once boiling, immediately lower the heat and simmer vigorously until the cream reduces to about 3/4 cup (about 4 to 8 minutes). Take the pan off the heat and remove and discard the garlic cloves. Let the cream cool slightly, stirring occasionally to keep a skin from forming. Season with salt and pepper. 

Transfer spinach and broccoli to a casserole dish and spread evenly across the bottom. Pour over the cream and top with the breadcrumbs and parmesan and season. Bake until the gratin is brown and bubbly, about 25 mins. Let rest for about 10 minutes then serve.
