Tabouli-style Broccoli & Quinoa Salad


Place the broccoli in a food processor and blitz until it resembles fine grains.Cook the quinoa by bringing it to the boil in the water in a large saucepan. After 12 minutes, add the broccoli and cook for a further 5 minutes or until most of the liquid has been absorbed. Fluff up with a fork. Allow to stand and cool.

Drain excess moisture from tomatoes in a colander. Mix the lemon juice and olive oil together and season.

Assemble the salad in a large bowl by combining the broccoli and quinoa, tomato, onion and herbs. Drizzle over the lemon juice mixture and mix well.
