Salmon, Broccoli and Mushroom Frittata

This quick and easy frittata gives you a healthy breakfast or lunch in no time. Serves 4


  1. Heat oil in pan and sauté onion over low-medium heat for 3 minutes. Add broccoli florets and heat for a further 3 mins, stirring frequently.
  2. Add garlic and mushrooms and continue to sauté for another 2 minutes.
  3. Add salmon and cook for another minute. Stir well, season and gently scrape pan with a wooden spoon to remove any slight burning.
  4. While veges are cooking, crack eggs into a bowl and beat well. Season with salt and pepper and stir in chopped basil. Pour eggs evenly over vegetables and turn heat to low. Cover and cook for about 5 minutes, or until firm. Cut into wedges and serve.

Serve with a side of LeaderBrand Continental or Mesclun Salad and some tomato relish.
