Roasted Broccoli & Sesame Lettuce

Directions

Heat a frying pan to a medium heat, add the oil and broccoli, fry for a minute, then add the stock and stir until the broccoli is tender and the liquid has cooked down.

In a separate pan, toast the sesame seeds over a low heat until they start popping. Remove, set a teaspoon of seeds aside for garnish and grind the rest in a mortar and pestle until a fine powder. Combine with the rest of the dressing ingredients.

Cut the iceberg lettuce into rough chunks, and lay on a platter. Pile up with the broccoli pieces and pour the dressing over the top. Garnish with remaining toasted sesame seeds.
