Broccoli and cauliflower cheese

Broccoli & Cauliflower Cheese


Preheat oven to 200ºC. Cut the broccoli and cauliflower into florets. Be sure to also use the stalk by cutting into thin rounds. Place in an oil sprayed roasting pan. Spray the top of the vegetables and place in the oven and roast for 5 minutes or until golden and browning.

While the veggies are cooking, in a bowl mix the cream, stock, salt and pepper, and mustard together. Spread the breadcrumbs, then the grated cheese over the veggies and pour over the stock and cream mixture. Return to the oven, reduce the temperature to 180ºC and cook for a further 10 minutes or until golden and bubbling. Top with parsley to serve.
