Brazilian-style Steak Salad with Broccoli


Using a sharp knife cut diagonal lines across the steak without cutting through. Place in a bowl and rub in the cumin, salt, chilli powder, chilli flakes, garlic and then add lemon juice and oil and rub into the steak. Cover and marinate in the fridge for at least 2 hours.

Heat a non-stick frying pan to a high heat and cook marinated steak (reserving marinade) for 2-3 minutes each side or longer for more well done meat. Take off the heat and allow to rest, covered in a warm place, while you cook the veggies.

In the same pan and with any remaining marinade added, cook the broccoli, eggplant, and capsicum until tender and slightly charred. Remove and set aside, then add the haloumi to the pan and cook for 1 minute on each side or until golden brown and set aside. Cut the lettuce into wedges, held together by the core. Heat in the same pan on each side, until just softening. Add more oil if necessary.

Assemble the salad in a large bowl and serve with the enclosed Fresh’n Crispy Salad dressing on the side.
