Beetroot Pasta with Creamy Broccoli Sauce


Prepare beetroot pasta as per recipe here. Bring a pot of water to the boil over a medium-high heat and cook the beetroot pasta until al dente.

While pasta is cooking, place a pan over medium-high heat and add oil and the diced onion. Once the onion has softened, add the chopped bacon until it crisps up a little. Add the broccoli and cook for 3-5 minutes. The add the crème fraîche and stir through to coat the onion, bacon and broccoli. Season with salt and pepper.

Once the pasta has boiled, drain and place in a large bowl. Top with creamy sauce and sprinkle with Parmesan cheese and fresh chopped flat leaf parsley. Serve immediately.
