Asparagus & Ricotta Pizza


Preheat oven to 220°C.

Put all the base ingredients into a food processor and blend until smooth. Line 2 pizza or roasting pans with baking paper and divide the mixture between them. Bake the bases for 20 minutes or until golden and cooked through.

While the pizza base is cooking, prepare the topping by cutting the woody ends off the asparagus, then cutting in half. Cut the spring onion into similar sized lengths to the asparagus and place in a roasting dish with the olive oil. Cook in the oven for 10 minutes.

In a bowl, mix the ricotta, lemon juice, and mozzarella. Once the base is cooked, spread over the ricotta mixture, top with asparagus, spring onion and capers and cook for a further 15 minutes or until the ricotta mixture is bubbling and turning golden. Top with snow peas and serve.
