Asparagus and Bacon Bread and Butter Pudding


Preheat the oven to 180°C.

Heat a frying pan to a medium-high temperature. Cook the bacon until crispy. Remove from the pan and add the asparagus to the pan in the bacon fat. Cook for 3 minutes.

Without cutting right through the base, cut the bread in slices across the top of the loaf, almost through to the bottom, but leaving the base intact.

Whisk the eggs with the milk and cream and season. Place the loaf in an ovenproof dish that it fits in snugly. Start filling the loaf with the spinach, bacon, asparagus and cheese, making sure each slice contains some of all of the ingredients. Pour over the cream mixture and bake for 30 minutes or until the egg has set and the bread is golden brown. Serve immediately.
