Roast Beetroot, Feta & Chickpea Salad


Preheat the oven to 180ºC. Place the washed baby veggies in a roasting dish with the olive oil and cook for 15 minutes. Add the beetroot and return to the oven for approx 5 minutes.

Arrange the spinach on a platter, top with chickpeas, capsicum and cooled roasted veggies. Crumble over the feta cheese and season well with salt and pepper. Drizzle olive oil and lemon juice over the salad before serving.
