LeaderBrand Pure n Ezy Beetroot Crepes

A healthy, easy and delicious finger food - great for when guests are heading your way.



Melt the butter. Then in a separate bowl, whisk the eggs, then add the milk, beetroot juice, water, sugar, butter and salt. Stir well.

Place the flour in a large bowl and form a well in the centre. Pour in the liquid mixture and whisk to combine, incorporating the flour a little at a time to prevent lumps.

Alternatively use a blender, and blend all ingredients for 1 minute on high, or until completely smooth. Refrigerate the batter for 2 hours. Let batter sit at least 15 minutes at room temperature before cooking.


Lightly grease a frying pan with oil or butter and place over medium ­high heat. When the pan is just beginning to smoke, remove from heat and whilst holding in one hand, pour in a ladle full of batter. Immediately tilt the pan to spread the batter evenly across the surface. Return to the heat and when lightly brown, turn the crepe over with a spatula.

Cook for a further 10 seconds then take out and pile up on a dinner plate. Don't worry, the first few are often disasters!

Fill with spinach and feta, or prawns and cream cheese.
