LeaderBrand Christmas Beetroot Cookies


Pre-heat the oven to 180 degrees.

Line a baking tray with baking paper. Use cookie cutters to cut Christmas shapes out of the pastry. Place cookies in the oven for 8-10 minutes untilgolden. Remove from oven and cool completely.

Mix icing sugar and beetroot juice together in a small bowl.

Tip: If the icing it too runny, add a teaspoon of icing sugar until you reach the right consistency. Transfer the beetroot icing into the sandwich bag. Seal the sandwich bag and cut a small hole in the corner. Pipe the beetroot icing onto the cooled Christmas cookies.
