Beetroot & Kale Pesto Pizza


Preheat oven to 220°C.

Start by preparing your pizza base. In a large bowl mix the water, sugar and yeast and leave to stand in a warm place for 5 minutes or until the yeast froths. Stir in the rest of the pizza base ingredients, form into a ball and knead for 5 minutes. Cover in cling wrap and leave to rest in a warm place again for a further 30 minutes or until the dough doubles in size. Divide in 2 and on a floured surface roll out to desired shape.

Put the bases onto lined baking trays or pizza pans and bake for 10 minutes or until the bases are golden around the edges.

While the base is cooking, prepare your toppings. In a food processor, blend together the pesto ingredients until not completely smooth. Spread pesto over base and top with salami, beetroot, cherry tomatoes and top with crumbled feta. Bake for 15 minutes or until the feta is turning golden.
