Balsamic Beetroot with Brussels Sprouts

Serves 2-4.

Directions

Preheat the oven to 180°C.

In a roasting pan combine beetroot and thyme, drizzle with oil and sprinkle with sugar. Bake in oven for 10 minutes.

Add the Brussels sprouts to the beetroot and mix. Season to taste. Bake for a further 5-10 minutes, until beetroot is tender and sprouts are golden.

Serve sprinkled with goats’ cheese and pine nuts, and drizzled with balsamic glaze.

 

Tip: You can also make canapés – finely chop the cooked beetroot and sprouts serve in tart cases, sprinkled with extra herbs and balsamic glaze.
