Beetroot and Lentil Burgers

Serves 4.


Using paper towel, squeeze excess liquid from beetroot. Place in a bowl.

Pulse lentils and spring onions in a food processor until pulpy. Transfer to the bowl with beetroot. Stir in feta, breadcrumbs, eggs, mint and sumac. Mix well. Season to taste.

Shape beetroot mixture into four flattened patties, use extra. Chill for 15 minutes.

In a large frying pan, heat oil on medium. Cook patties 4-5 minutes each side until golden. Drain on paper towels.

Spread mayonnaise on one side of each roll. Top with patties, tomato, onion and lettuce.


Tip: To make peri peri mayonnaise, mix 1 tbsp peri peri seasoning with 1 cup pre-made mayonnaise.
